Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

I wanted a simple, healthy, and quick side dish to pair with the chicken and orzo I was making for dinner. I grabbed a zucchini and a container of grape tomatoes along with some feta and chives. I simply roasted the seasoned veggies for 15 minutes then topped them with fresh chives and feta cheese. My kids don’t care for zucchini so they weren’t impressed with this side dish. My husband and I, on the other hand, both loved it and thought it paired nicely with the rest of our dinner.

Preheat oven to 350 degrees. Coat a small baking dish with cooking spray.

Place the grape tomatoes, zucchini, and minced garlic in the baking dish. Drizzle with olive oil, sea salt, and fresh cracked pepper, to taste. Toss to coat the veggies evenly.

Place into the oven and roast for 15 minutes. Remove from the oven and pour them into a serving bowl. Top with feta cheese and fresh chives. Serve immediately. Enjoy.

1 6 oz container of grape tomatoes
1 zucchini, diced
2 tsp olive oil
Sea Salt and fresh cracked pepper, to taste
Feta cheese
Fresh chives, chopped

Directions:

Since my husband was working so hard at installing our new dishwasher, I decided to make him a special lunch. I grabbed some crescent rolls out of the fridge along with some eggs, roasted bell pepper, spinach, and feta cheese. I made some scrambled eggs with a bit of dill then tossed in the spinach and roasted pepper right when the eggs were done. I layered the eggs onto the rolled out crescent roll dough and topped them with feta cheese. I braided the dough and baked it until golden brown. My husband was thrilled because he loves breakfast braids and he thought the flavor combination was excellent.

Remove the crescent roll dough from the container and roll into a ball.  Let it sit for 15 minutes so the dough is easier to use.  Preheat the oven to 375 degrees and line a baking sheet with a silpat mat.

Heat a skillet over medium heat and coat it with cooking spray. Whisk the eggs together with the milk, sea salt, freshly cracked pepper, and dill, to taste.  Pour the egg mixture into the skillet. Constantly fold the egg mixture from the bottom of the pan to the top. This will keep them from overcooking and the middle section will stay soft and fluffy. Do this constantly for 1 or 2 minutes, or until the eggs are just set.  Don’t overcook – they will finish cooking in the oven. Add the chopped roasted red pepper and spinach then stir gently to mix the ingredients.

Roll the dough out on top of the silpat mat into a rectangle.  Add the scrambled eggs down the center of the dough then top with feta cheese. Cut even slits on both sides of the filling with a pizza cutter.

Fold the ends over the filling then starting at one end, fold alternating strips at an angle across the filling.

Place into the oven and bake for 13-15 minutes, or until golden brown. Remove from the oven and let it rest for 1-2 two minutes before slicing and serving.  Enjoy.

2 tbsp baby spinach, chopped

This is my new favorite pasta and I can’t wait to make it again.  I found this in an old Everyday Food and decided to finally give it a try – I am so glad I did.  I made my own tapenade[1] because it is ridiculously expensive and I like my homemade version better anyway.  I couldn’t decide between using arugula or spinach so I ended up using a little of each. This dish was a hit with all of us, especially me!  I had the leftovers for lunch today and it was just as good!  I highly recommend this recipe.

Make the tapenade[2].  Set aside for the flavors to mingle.

Cook the pasta in a large pot of boiling salted water, per instructions.  Drain pasta.  Return the empty pan to the stove and heat the olive oil over medium heat.  Add the tomatoes, crushed red pepper, sea salt, and freshly cracked pepper, to taste.  Cook, stirring often, for 4-5 minute or until the tomatoes are bursting; add the minced garlic and cook, stirring constantly, for 1 minute. Return the pasta back to the pan, add the tapenade, spinach, and arugula then mix until evenly coated.  Drizzle a bit more olive oil then season with sea salt and freshly cracked pepper, to taste.  Place into serving bowls then top with feta cheese.  Serve immediately.  Enjoy.
