Chocolate Chip Clouds

Light, airy and chewy with chocolate chips in every bite. These cookies are a must for Santa, we’ve been making them for years and everyone loves them. Made with egg whites, sugar and chocolate, they are very light, gluten free and just melt in your mouth.

The perfect chocolate treat, and when you make them the night before, they are chewier the next day, which is just how I like them. Hope you enjoy and wishing everyone a Merry Christmas!

Adapted from Hershey’s Kitchens[1]
Servings: 30 • Serving Size: 1 cookie • Old Points: 1 pt • Points+: 1 pt
Calories: 53.7 • Fat: 2.2 g • Carb: 8.4 g • Fiber: 1.7 g • Protein: 1.1 g  


Ingredients: 
 

  • 1/2 cup egg whites (room temperature)
  • 1/8 tsp cream of tartar
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 1 cup chocolate chips



Directions:
Heat oven to 300°F. Cover cookie sheet with silpat or nonstick silicone pad.



Using a mixer, beat the egg whites and cream of tartar together in large bowl at high speed until soft peaks form. Gradually add sugar a little at a time, then vanilla, beating well after each addition until you get stiff peaks, the sugar is dissolved and the mixture is glossy.


Sift cocoa onto egg white mixture; gently fold until combined.



Fold in chocolate chips. Drop mixture by heaping tablespoons onto cookie sheet. Makes 30 to 32 cookies.


Bake 34 to 40 minutes or just until dry. Cool slightly; remove from cookie sheet. Cool completely on wire rack. Store covered, at room temperature.

Eyeballs and Bandaids – HAPPY HALLOWEEN!

Yes, you read that right. I surprised my kids yesterday after school with some creepy and gross snacks. They loved the “used” bandaids and bloodshot eyeballs and had fun trying to gross each other out. These little treats couldn’t be easier to make and made my little ones very happy! I love it when something so simple can put HUGE smiles on their faces.

For the Eyeballs:

Flatten the marshmallows with the palm of your hand. Place a chocolate chip upside down into the center of the marshmallow then place squiggles lines around the marshmallow.

For the Bandaids:

Combine a touch of milk with the powdered sugar – not too much because you want the frosting thick. Separate the graham crackers. Spread a bit of frosting down the center of each cracker. Place a smear of red frosting in the center of the white frosting.

Place on a serving tray and serve. Enjoy!

For the Eyeballs:

4 marshmallows
4 chocolate chips
Red gel frosting

For the Bandaids:

2 whole graham crackers, separated
2 tbsp powdered sugar
1/2 tsp milk, more if needed
Red gel frosting

Directions:

Top 10 Favorite Skinny Mother’s Day Brunch Recipes

I’m really not a complicated person, in fact for Mother’s Day, all I really want is
to relax at home with my kids and my husband (and maybe some breakfast in
bed or even just a cup of coffee).

But I like to give my
Mom the day off, so I usually host a very casual brunch with my parents
and family. Everyone brings something and it’s usually a fun, relaxed afternoon. If this sounds like something you do with your family, I though I would share some of my
favorite Skinny Brunch recipes.

For starters, I wouldn’t mind waking up to the smell of Chocolate Chip Banana Pancakes[1] (hint hint if my husband is reading this) as pictured above. They are light and fluffy with chocolate chips in every bite.

When it comes to muffins, these Insanely Good Blueberry Oatmeal Muffins[2] are one of my favorites (and healthy too), made with antioxidant rich blueberries and good for your heart oatmeal.

I’m such a sucker for scones, especially when they involve chocolate like these Skinny Chocolate Chip Buttermilk Scones[3] which everyone loves, perfect with a cup of tea.

Baked oatmeal is usually my go-to breakfast for brunch because I can make it the day before, then heat it up. This Baked Oatmeal with Blueberries and Bananas[4] is my favorite (it’s like dessert for breakfast)!

If you are feeding a crowd, I love making Bananas Fosters Overnight French Toast[5] (omyword!) because you do most of the work the night before….

This Applesauce Nut Bread[6] with cinnamon and spice is so moist and delicious, with small bits of fresh apples and walnuts in every bite and can also be made a day in advance.

For something a little more savory, I love this Swiss Chard Frittata[7] made with caramelized onions and dark leafy greens.

Or these Baked Eggs with Wilted Spinach[8]

Easy Crust-less Spinach Feta Pie[9] is also a favorite for brunch, I could eat this every day!

And for something a little sweeter, if you are looking for a dessert, I just love these Skinny Hummingbird Cupcakes…[10]
